Hello, Friends! Does anyone else get as excited about summer fruit as I do? All the farmstands and farmers markets are bursting with the best of the season. My summer fruit muse is stone fruit. I want to eat peaches, nectarines, and plums almost every day.
I often cook and bake with peaches every summer, and this year, I had a craving for peach pie with a crumble topping, which I’ve never tried baking before. I found a great recipe at King Arthur Baking for Peach Streusel Pie and I was very happy with the way it came out (so was the rest of my family- it was gone in a flash!) King Arthur Flour is my go-to when baking, and I love trying out their recipes! As usual, I tweaked the recipe just slightly, and added the zest of one lemon to the filling and ½ cup of toasted, sliced almonds to the topping.

Peaches and other stone fruits are fantastic in savory dishes, too. I was recently at The Lake House on Lake Bomoseen and tried their Grilled Stone Fruit Salad with Vermont burratini, which was refreshing and delightful. The gorgeous lakeside setting with the sunshine bouncing over the ripples in the water made it taste all the better. We’ve grilled peaches at home and served them with roasted pork loin- they go so well together, but I’ve never tried them in a salad. I plan to make a variation on this salad at home before summer’s end.

They also make tremendous strawberry and blueberry ice creams, too. Yum!
